Harvest time: second and third ten days of October, manual harvest in small containers
Winemaking technique: The overripe grapes are harvested and subjected to a light pre-fermentation cryomaceration at a controlled temperature. They are then pressed and the must is fermented in oak containers.
Organoleptic characteristics: The color is golden yellow. The aroma is complex, reminiscent of dried fruit, spices, and honey.
